i took josh to his first clemson football game and it was an exciting one. clemson had recently broken into the top 25, and it's not unusual for them to choke and slide back out of the polls. it didn't happen for this game - we took the lead early on and just held on in the final moments to win.

and yes, they lower the goal posts after a game to prevent students from tearing them down. they had to upgrade those shortly after we beat #3 ranked florida state my sophomore year.

i tried my hand at making carrot cake (cupcakes and a 'loaf') from scratch for one of the guys at work. i need to work on my presentation, but they tasted moist and delicious.

(1 box cream cheese, 1.5 sticks butter, 1 box powdered sugar, 1 tsp vanilla)

after wrestling with the cupcakes, i poured the rest of the batter in a loaf sized pan to save time and energy. i'm not sure why it sank so much in the middle? perhaps you more expert bakers could help explain this. it worked out though, i did not mind the ratio of icing to cake.

later in the month, i made "tiger tails" for a goody (/food grazing) day at work. very easy to make and it appears well-liked as there were only two left (i couldn't eat them, so i can't vouch for how good they were/weren't). these would be great for tailgating - just use your team's colors, and don't call them tiger tails. unless you're lsu or auburn. (speaking of, how 'bout that trifecta of tiger victories on saturday?)

  1. I wouldn't worry about the sunken loaf. The more icing the better! Love the tiger tails... I had seen something like that done in a Christmas theme and thought I would try it sometime. Yours look like they turned out great!

  3. Ha! Look at you! football and baking bug...sounds like fall! I need to learn how to make carrot cake (not from a box) since it is my husband's favorite. really should be better at this sort of thing. Happy Monday Lindsay!

  6. I think I just gained 10 lbs reading your blog! I have sinkage in the middle with these things, too. Tried to make banana bread the other day, which I make frequently. Fail. Tried zucchini bread. Fail. I think it was a sign from God I didn't need to eat that stuff.

    Mileage is picking up!! Better than August! :)

  8. I didn't know you went to Clemson, I've actually watched a decent amount of your last couple games - they are fun to watch! Sammy Watkins is insanely fast, I think he should get some buzz for the Heisman trophy. I think your team has a decent chance of going 12-0 and playing for the national title game (or at least a BCS bowl game somewhere). That win over Virginia Tech this Saturday was huge.

    I've decided that I need to go to a Clemson game sometime, it seems like a great time!

  20. Could be batter too watery and heavy (carrot cake is a heavy batter) or the batter sat out for awhile then was stirred - this kills the leavening.

  22. Nice pictures of cakes! right now I'm learning to bake a cake in the oven and on Sunday I did my first. Every Sunday I make one with my daughter and we had a great time. but not carrots ... I prefer chocolate!

    Lindsay Incidentally, the other day I thought of you in a race .. I was running a half marathon and at las mile just entering goal had a girl (beautiful) with a T-shirt M & M. I was amused and I remembered your love of M & M..

  29. Yay for getting back into the groove of running! You'll get it back and come out stronger. Some catch-up responses... I'm not sure how responses to comments work and how to make them viewable, but 1) the iPod touch connects to the internet, so the person who found it could open the email application and find my email address. 2) Yeah, I know what you mean about Insanity... the DVDs do repeat a lot. It's a good cardio aternative I have when it's too dark to run outside and the fitness room is closed, though. I got it on eBay, so it was cheaper than normal. 3) Thanks for the tip about the Camp Croft HM - looks intense. I'll definitely be thinking about it.

  37. Hahah thanks for your comment. I had to amend my post as to not sound quite so insecure and ridiculous, because I'm not really that way. But I must admit, I have felt a little scared of 26.2 miles and this was the first time that I felt a little more relaxed about actually completing it in a proper fashion.

  43. You are so domestic, despite the loaf! I think that frosting looks good enough to attack with my bare hands. I have a terrible weakness for frosting. It's gross actually.
    I have always, always, always(always), wanted to go to a college football game and wear RED. How fun.

    Saturday I was sitting with a Clemson fan and Terps fan in the stadium and seriously, Clemson fans are the nicest people ever. Even after we blew it, they were like it's just to mean to rub it in.

  46. I didn't see any of the Clemson game, but one of my friends was at it who is a Maryland fan, and she was crushed when it was over! I can't believe they came back from 38-17 or something to win, crazy game.

    If you guys get by Georgia Tech I think you can go undefeated, that is a big game coming up...
