i'm only 14 years late to using that super cool vocabulary, but these brownies were awesomesauce.
yes, brownies. and yes they qualify for this primal/paleo eating (although josh says they defeat the purpose of this 'diet').
sweet potato brownies
from paleomg. aka my soon to be new best friend.
ingredients:
1 sweet potato (i only used half)
3 eggs, whisked (that means mix it up good after you dump in other ingredients, right?)
1/4 cup coconut oil, melted (i used evoo)
1/3 cup raw honey
1/2 cup enjoy life chocolate chips (plus a handful to snack on)
3 tbsp coconut flour
2 tbsp unsweetened cocoa powder
1/4 tsp baking powder
1/4 tsp vanilla
1/4 tsp cinnamon
pinch of salt
note: cocoa powder is not delicious by itself. do not bother to lick the measuring spoon. you may end up like glozell.
bakemicrowave the sweet potato as you would normally. peel skin and mash it up. i neglected to mash mine up well so there are "surprise" chunks of sweet potato throughout the brownies.- add wet ingredients and then add dry ingredients.
- stir it up. pour into an 8x8 pan. bake 30-35 minutes at 350°.
- do everything possible to not eat the entire pan in one sitting.
and i swear i am not turning into a foodie. c'mon i was too lazy to fully follow the recipe. besides, wouldn't you rather discover a delicious healthy brownie recipe instead of hear about my whopping 1-mile run? exactly.
i did run a mile on tuesday though; it took forever. i also did 50 assisted (with a band) pull-ups.
Looks delicious to me. Any brownie with built-in moistness must be great! But if you pair that with "banana soft serve" I'm afraid I'm going to have to smack you.
ReplyDeleteHaven't heard of this banana soft serve. I take it it's not delicious.
Delete50(assisted)push-ups....kick ass woman!!! I would love to work on that, but for now, it's running! And KB's of course!
ReplyDeleteRecipe looks good, I wonder if one could substitute zucchini for the sweet potato? Not a fan of the sweet potato....
I'd give zucchini a whirl, sure. Could also use pumpkin!
DeletePumpkin! Now you're talkin'!
DeleteThat looks delish :). I love sweet potato anything too. Congrats on your mile and pull ups!
ReplyDeleteI was going to ask the zucchini question too, because I have two sitting on the counter that are about the size of my legs that I have no idea what to do with. Maybe I need to make like 30 batches of brownies.
ReplyDeleteSounds like the best use for the zucchini to me! Zucchini bread is also good, though I haven't tried a primal/paleo version of it yet.
DeleteYou could have just said they were epic...
ReplyDeleteI figured you (specifically you) would be annoyed enough at how totes awesomesauce they already were ;-p
DeleteWell, you aren't going to believe this, but Karma just took a whole gigantic bite out of my ass:
Delete(this is the movie I am currently working on. Yes, it is true. It used to be called "Leafmen" but it got changed)

Subliminal messages embedded into brownies...
ReplyDeleteI suddenly want to eat brownies!
Paleomg is my favorite! My sister introduced me to it last year, I reference it often. I love how "eat me" has been pricked into the brownies, nice touch :)
ReplyDeleteWell I did the standard test-for-doneness and then was inspired to turn my test holes into something greater.
DeleteI love to hear about your running! The brownies look awesome too! Of course, we can't cook with eggs b/c one of my tykes can't eat them. :( Maybe I could use applesauce instead...
ReplyDeleteThis is just what I need to help me stop eyeing the cookies my son's girlfriend made for us.
ReplyDeleteThey definitely satisfy the sweet tooth!
DeleteAmazeballs fo sho! I am so making these....Ive got coconut oil here staring at me just begging to become brownies. It's the coconut flour I need to set out in search of.
ReplyDeleteAm I blind or do I not see the baking temp?? Probably bind...
ReplyDeleteNo, I forgot that "minor" detail. 350! (Will edit post)
DeleteThese look great!!! You may be a little foodie!! :-)
ReplyDeleteOkay, those look pretty good... except for all the weird ingredients. haha
ReplyDeleteI know these are very good. My sister and her late husband used to farm tons of sweet potatoes and they always made us all kinds of nice food with sweet potatoes when we visited.
ReplyDeleteWHOA. These look amazing! I've tried brownies with pumpkin subbed for the oil or butter before, and they're terrific—I bet these have the same effect. In other healthy-ish brownie news, I've heard the Jessica Seinfeld recipe is pretty wonderful, too: http://www.food.com/recipe/jessica-seinfeld-healthy-brownies-259359
ReplyDeleteHow is that even possible? Do they taste like sweet potato or like brownie?
ReplyDeleteI don't think I've ever seen coconut flour. Ill be on the lookout for it.
Looks delicious! I love sweet potatoes so maybe I'll give this a try.
ReplyDeleteOh my!!! Those look delicious!!
ReplyDeleteHi Lindsay! We went to Edisto. It was awesome! We didn't want to go anywhere with lots of people or tons of shopping, so this was perfect for us.
ReplyDeletethis recipe shall be tried as soon as I return to California!
ReplyDelete50 pull ups (even if they were assisted) is very impressive in my book! I'm sooo far away from being able to do even one pull up.
ReplyDeleteI was craving sweet potatoes the other day, I wish my oven worked so that I could put on in the over and maybe sprinkle a little brown sugar on it...or maybe I'd make these crazy brownies!
50 pull ups assisted or not, make you a total badass. I think you should reward yourself with a brownie.
ReplyDeleteI'm excited to try that recipe. When I saw sweet potato? - I KNEW it was going to HAVE to make it to my "MUST BAKE" list. Neat little "Eat Me" design ;)
ReplyDeleteThey look darn yummy...shame I am vegan for 30 days!
