trip of the month: rainy weekend in the georgia mountains. basically march 20th rolled around and i realized oh crap i didn't go anywhere yet.
- on the scale - all month long i barely see any changes on the scale but then magically on the last day of the month it reports a better number. not sure what's up with that but i'm not complaining.
- for the record: i don't have a bad body-image of myself. i actually like to weigh in. i can afford to lose a couple pounds. i shouldn't pig out daily like i used to (um hi 12oz bag of m&m's in one sitting).
- for another record: i don't really dilly dally in the bathroom to make others uncomfortable. i've just thought about it. trust me, i don't want to get caught in a stench bomb.

i also made some delicious banana oatmeal cookies with no milk. they were chewy and awesome for breakfast, snack or dessert. i'm going to try these sometime (with coconut or rice milk) as they don't have nearly as much sugar (baking experts: what can i sub for butter?).
Good month overall! I did not see a grade:) so was not sure what you thought?
ReplyDeleteYou are really becoming domestic, aren't you, baking and all! I am impressed. These days I only bake frosting only cakes with my son (since, lets face it, frosting is the best part).

You can probably substitute Crisco for the butter. Oh wait, that probably is even less healthy. Oh well, I tried :) haha

ReplyDeleteThose cookies sound really awesome! However, I have no clue what to substitute for butter except margarine or one of those Smart Balance "healthier" butters which I think might mess up the recipe. I wouldn't chance it, anyway.

um, can you make some cookies to bring with you when you come to visit? Or should I go to whole foods and get a package of the simply chocolate chip cookise and we can make them together that night??
ReplyDeletei agree, don't question the weight loss. and i like how you and i are donig the same thing at the same time, getting rid of clothes we never wear anymore. got rid of my bridesmaid dress that might have been the only one i could ever see myself wearing again!
Looks like a good month to me! That's a lot of mileage... I can't see me doing mileage like that even in my dreams.

I know you can sub applesauce for oil, I do that all the time and it's awesome. I'm not sure about butter though - maybe you can still sub applesauce for butter, but you might want to check that out on the internet first. Great month!

Thanks for the banana oatmeal cookies recipe - they were delicious! Even though I used all of the brown sugar we had left (which was 1/3 cup short) and my husband was left brown sugarless for his morning oatmeal. He cut me a break since he liked the cookies so much! Maybe next time I'll actually plan ahead and have all of the ingredients in their proper amounts :)
